Inevitably, they have a little pressure. Succeeding a renowned table is not easy. Emrick Le Corre and Camille Dalibardrespectively 32 and 29 years old, opened the dining bar on Thursday November 10, 2022 Windlass at 36 rue Fouré in Nantes (Loire-Atlantique) in the premises vacated by the gastronomic restaurant l’U.ni.
Previously settled in Belgium, the couple fell in love with the city of the dukes. At the end of the health crisis linked to the Covid-19 epidemic, he had expressed the wish to open his own business. After two months of work this fall, including the construction of a mezzanine, trade shows a new face. « We wanted to create a warm place, a place where you really feel good, a bit like home », develops the co-manager, particularly in charge of the management of the room.
His companion, at the helm of a café in Wallonia for several years, will manage the bar part of the business as well as its animation. Dj set, exhibitions and tastings are already in the boxes.
A lunch menu, plates to share in the evening
Open Tuesday to Saturdaythe establishment will offer a bistro menu during the weeklunch (the formula from 19 to 23 euros, Ed), and plates to share in the evening. “With quality products, warns the boss, depending on the chef’s inspiration. »
What if we had to summarize Guindaille? “Here, we start with a drink and then we end up eating,” replies Emrick Le Corre. “We believe in what we do and we do it from the heart,” insists Camille Dalibard, convinced that she is up to the challenge.
